Day 9- Healthy Chicken and Veggies

I have been experimenting with Healthy Chicken recipes for Dinner (as you may know if you saw my blog from Tuesday.) Although, this one has to be my favorite. This Healthy Chicken and Veggies is jam packed with nutrients and is delicious!



You can serve this with a bed of rice or you could even leave out the chicken and add black beans ( I may try that soon.) This meal is great if you are on a low-calorie, low-carb or paleo diet.



Prep time: 10 minutes

Cook time: 15 minutes

Total time: 25 minutes

Serves 4



Ingredients:


- 3 boneless chicken tenders, diced

- 2 tbsp of olive oil

- 1 cup of mixed sweet mini peppers, sliced

- 2 cups of broccoli, chopped

- A package of whole mushrooms, sliced (about 3 cups)

- 2 cups of carrots, sliced

- 1 medium onion, sliced

- 3 garlic cloves, minced

- 1/2 tsp of garlic powder

- 1/2 tsp of paprika

- 1/2 tsp of cayenne pepper

- 1/4 tsp of black pepper






Instructions:


1. Put 2 tbsp of olive oil in the bottom of pan


2. Put chopped up chicken, sliced onions mushrooms, carrots, peppers, broccoli, minced garlic, black pepper, cayenne pepper, and paprika all in one pan.





3. Cook on medium high until chicken is cooked through, stirring occasionally


4. Cook on low, covered for about 5 minutes (or until veggies are tender)


5. Serve and enjoy 😊
