Day 7- One Pan Healthy Chicken and Veggies Recipe

I laid out two chicken breasts for dinner. So I looked around the kitchen and found some mushrooms, onions, garlic, and some spices and cooked up an amazing dish that I just had to share with you guys. It was so quick, easy and healthy but oh so delicious. Definitely my new go-to meal.


You can serve this with a tortilla and make a soft chicken taco, with a bed of rice, or you can just eat it by itself like we did. 😊 This meal is great if you are on a low-calorie, low-carb, paleo, or keto diet.


Prep time: 5 mins

Cook time: 15 mins

Total time: 20 mins

Servings: 4



What you’ll need:


• 2 chicken breasts, chopped or diced

• 2 tbsp olive oil

• 1 small onion, sliced

• 1 package of whole mushrooms, sliced

• 3 cloves of fresh garlic, minced

• 1/2 tsp of sea salt

• 1/2 tsp of black pepper

• 1/4 tsp of cayenne pepper

• 1/4 tsp of paprika

• lemon (optional)




Instructions:


1. Put 2 tbsp of olive oil in the bottom of skillet


2. Put chopped up chicken, sliced onions and mushrooms, minced garlic, sea salt, black pepper, cayenne pepper, and paprika all in one skillet (you can add more veggies or swap some out if you’d like)




3. Cook on medium high until chicken is cooked through, stiring occasionally


4. Let it simmer, covered for about 5 minutes


5. Take the lid off and serve with a lemon wedge






I felt like I was splurging while eating this meal but it is actually super healthy and good for almost any diet.

2g sat fat

4 carbs

2.4g sugar

24g protein



This meal would be great for lunch or dinner!
