Day 37- Cajun Chicken and Rice

As you can probably tell based on my previous recipes, I love spicy food. One good thing about this meal though is that it’s not too spicy. It is just right.


This meal is amazing and so nutritious.


Prep time: 5 mins

Cook time: 15 mins

Total time: 20 mins

SERVES 4


INGREDIENTS:


• 2 tbsp of olive oil

• A cup of mixed mini peppers, chopped

• A large Vadaila onion

• 4 chicken tenderloins

• 1 tsp of garlic powder

• 1/2 tsp of oregano

• 1/4 tsp of black pepper

• 1/4 tsp of chili powder

• 1/2 tsp of paprika

• A dash of salt

• A lime

• 2 cups of brown rice (I used instant- it cooks in 10 mins)



INSTRUCTIONS:


1. Put chicken, peppers, onions, and seasoning in a iron skillet


2. Squeeze 2 lime slices on top


3. Bring water to boil for rice (look on chart of box for measurements)


4. Cook chicken and veggies on medium until chicken is cooked through


5. While chicken is cooking, continue following instructions for rice


6. Once chicken is cooked through, simmer for 2-3 mins or until Veggies are tender


7. Serve with a bed of rice and a lime wedge.


8. Enjoy!

This Cajun Chicken and Rice is a perfect meal for dinner and is made in under 30 minutes! This is definitely a must try.
