Day 30- Chicken and Black Bean Fajitas

They are packed with nutrients and so full of flavor!


These Chicken And Black Bean Fajitas are absolutely amazing! I have been craving El Mazatlan (a Mexican restaurant where I live) so I decided to make a healthy version of one of my favorite dishes.


These turned out better than I ever imagined and I had to share this recipe with you guys! Try it for yourself and you’ll see why.



Prep Time: 5 mins

Cook Time: 15 mins

Total time: 20 mins

SERVES 4



INGREDIENTS:


• 1 big chicken breast, chopped

• 2 tbsp of canola oil

• 1/2 cup of red mini peppers (I was running out of peppers or I would’ve used at least a cup)

• 1 small onion, chopped

• 4 garlic cloves, minced

• 1/4 tsp of back pepper

• 1/4 tsp of cayenne pepper

• 1/4 tsp of paprika

• 1/4 tsp of chili powder

• 1 can of black beans (I used no salt added)

• 4 100% whole grain tortillas (8 inches)




INSTRUCTIONS:


1. Put all ingredients (except black beans) together in a pan


2. Cook on medium until chicken is cooked through


3. While chicken and veggies are cooking, drain and rinse black beans


4. Once the chicken is cooked through, add black beans



5. Turn down to low and cover for 5 mins


6. Serve on a tortilla and enjoy!
