This Fiesta Grilled Chicken Salad is so simple and so tasty! I wanted to make something different than my normal one pan chicken meals so this was fantastic.

Cook time: 10 mins
Total time: 15 mins
Serves 4
INGREDIENTS:
1 tbsp of coconut oil
4 chicken tenderloins, chopped
1/2 tsp of garlic powder
1/4 tsp of pepper
3 cups of 50/50 blend salad mix
Package of Dole fiesta ranch salad kit (comes with fiesta ranch)
Pizza blend shredded cheese (for the top of salad)
INSTRUCTIONS:
1. Put coconut oil in an iron skillet on medium until it melts
2. Cook chicken and seasoning on medium heat until cooked through
3. While the chicken is cooking put fiesta salad mix in a salad spinner with 3 cups of 50/50 blend. Rinse and spin it.
4. Add the fiesta packet that has black beans, corn, and peppers and gently mix. You can add a can of black beans and a can of corn if you want more than what’s in the little package.
5. Put salad mix in a plate or bowl, add chicken, fiesta ranch, and some shredded cheese on top and enjoy!
This was such an easy and delicious meal! I will definitely be making this again soon.
