So delicious and healthy!
I have really been craving chicken fajitas from my favorite Mexican restaurant so I figure why not make some at home? So that’s exactly what I did.
These turned out sooo bomb! If you like fajitas, you definitely have to try this recipe and then comment below and let me know how you LOVE IT! 😊
Prep time: 5 mins
Cook time: 15 mins
Total time: 20 mins
Serves 4
Ingredients:
• 2 chicken tenderloins, diced (I wanted more veggies than meat but you can do 4 tenderloins if you want more meat)
• 2 tbsp of Canola Oil. (Normally use olive but I ran out)
• 1 package of whole mushrooms, sliced (3c)
• 2 cups of mini peppers, sliced
• One medium onion, sliced
• 3 cloves of garlic, minced
• 1/2 tsp of garlic powder
• 1/4 tsp of paprika
• 1/4 tsp of chili powder
• 1/2 tsp of black pepper
• 4 tortillas (8 inches), heated
INSTRUCTIONS:
1. Place all of the ingredients in a skillet
2. Cook on medium high until chicken is cooked through
3. Simmer, covered for 5 mins
4. Heat tortillas in the microwave for about 30 seconds
5. Serve with tortilla or by itself for a low carb meal

I literally felt like I was at a Mexican restataunt while eating these! They were so amazing and they packed with nutrients. So delicious and healthy!
