Day 14- Vegan Black Beans and Veggies

After my weekend of eating crap, I decided to eat super clean this week. I made this amazing Vegan meal on Sunday and I had to share it with you guys. It’s so delicious and packed with nutrients!



Prep time: 10 minutes

Cook time: 20 minutes

Total time: 30 minutes

Serves 4



WHAT YOU’LL NEED:


1 can of black beans (I used no salt added)

2 tbsp of olive oil

3 cups of whole mushrooms, sliced (whole package)

2 cups of broccoli, chopped

1 cup of mini peppers, sliced

A medium onion, sliced

3 cloves of garlic, minced

1/2 tsp of garlic powder

1/2 tsp of paprika

1/2 tsp of black pepper





INSTRUCTIONS:


1. Put Olive oil in bottom of pan


2. Place veggies and seasoning in pan (everything except the beans)



3. Cook on medium for 10 mins


4. Turn down to low and cover for 5 mins


5. While the veggies are cooking, drain and rinse black beans


6. Add black beans


7. Cook on low, covered for another 5 mins


8. Serve and enjoy 😊

1 sat fat

27 carbs

1g sugar

9g protein


This is definitely one of my favorite meals. I’ll be making this at least once a week from now on. 😊
